How do discount bread stores get their product?

The employee at the local bread outlet store swears the breads aren’t "day old". She says it’s all as fresh as what you get at the supermarket. Is the decision made at the bakery, then? What criteria throws a loaf of bread from the grocery store to the discount store?

The discount bread stores I’ve been to, sell breads made by their own bread bakeries. Usually the breads in the bread discount stores are the ones left over after they have filled the orders for grocery stores. And sometimes it is what they call day-old-bread.

FYI: Fresh Bread is delivered to stores on Monday, Tuesday, Thursday, Friday, and Saturday.
For each of these days a different color twist tie or plastic tie, is put on each loaf of bread. Notice that the colors are in alphabetical order. So for the freshest bread follow the color code.
    Blue – Monday
    Green – Tuesday
    Red – Thursday
    White – Friday
    Yellow – Saturday
